Tzatziki Chicken Salad 🍗

170 calories - 27g of protein - 4 servings

  • 2/3 cup of 2% reduced-fat, plain greek yoghurt
  • ¼ cup of red onion
  • 1 tbsp of fresh lemon juice
  • 2 tbsp fresh dill, diced
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cucumber, shredded
  • 1 garlic clove, minced
  • 2 cup of chicken breast, cooked & diced

Mix all ingredients into a bowl and enjoy!

Fresh Green Bean Salad with Lemon-Mustard Dressing

90 calories - 2g of protein - 4 servings

  • 1lb fresh green beans, stems trimmed - cook for 4 minutes until crisp-tender. Drain and rinse with cold water.
For the dressing:
  • 2 tbsp olive oil
  • 2 tbsp of fresh lemon juice
  • 1 tsp of grainy brown mustard
  • pinch of sugar
  • 1 clove of garlic, crushed
  • salt & pepper to taste

Whisk until well combined. Then add the beans to the dressing. To finish, add 1/4 of thinly sliced red onions and serve.

Ocean Wave Tuna Salad 🌊

250 calories - 28g of protein - 4 servings

  • 2 cans of well drained tuna
  • ½ a cup of diced vegetables (bell pepper, cucumber, celery, green onions)
  • 1 can of small white beans, drained
  • 2 tbsp of freshly chopped parsley
  • 1 tbsp of olive oil
  • 2 tsp of balsamic vinegar
  • salt and pepper to taste

Mix well together, serve and enjoy!
